No Bake Chocolate Cookies

Ingredients
- 1 cup all natural peanut butter
- 1/2 cup raw honey
- 1/2 cup coconut oil
- 1/4 cup cocoa powder
- 2 cups quicking cooking oats
- 1 cup shredded coconut
- 1/2 cup chopped nuts, raisins, or dried cranberries
- 1 teaspoon vanilla extract

Preparation
Step 1
In a small saucepan, add peanut butter, honey, cooconut oil and cocoa powder. Melt on medium heat until smooth. Remove from heat and add vanilla.
Pour mixture over oats (at this point add additonal items if desired, but I only add the oats). Mix well and spread into a foil lined 8x8 inch pan. Place in refrigerator to firm. Always keep refrigerated because the coconut oil in them will cause them to soften easily.
