Ingredients
- 1# ground beef
- 3/4 c. chopped onion
- 3/4 c. shredded carrots
- 3/4 c. diced celery
- 1 tsp. dried basil
- 1 tsp. dried parsley flakes
- 4 tbsp butter or margarine
- 3 c. chicken broth
- 5 c. diced peeled potatoes
- 1/4 c. flour
- 8 oz. American cheese (2 c.)
- 1 1/2 c. milk
- 3/4 tsp salt
- 1/4 to 1/2 tsp. pepper
- 1/4 c. sour cream

Step 1
Brown beef, drain and set aside.
In same pan, saute onion, celery, carrots, basil and parsley in broth, potatoes and beef, bring to boil. Reduce heat and cover; simmer 10 to 12 minutes until potatoes become tender. Meanwhile in a small skillet, melt remaining butter and add flour. Cook and stir until bubbly, 2 to 3 minutes. Add to soup and bring to a boil. Cook and stir 2 minutes. Reduce heat to low and add cheese, milk, salt and pepper. Cook and stir until cheese melts. Remove from heat, blend in sour cream.
