Ingredients

  • 1 egg
  • 1/2 c maple syrup
  • 2 T palm shortening, melted
  • 3 c almond flour
  • 1/2 c arrowrot flour + more for dusting
  • 1/2 t salt
  • 1 t baking powder
  • Garnish
  • 1/4 c currants
  • oozing dark chocolate (see bleeding cupcakes)
  • coconut cream frosting

  • 1/2 c coconut butter
  • 2 T coconut oil
  • 1 T maple syrup

Preparation

Step 1

Preheat oven to 325. In a small mixing bowl combine wet ingredients and blend w/ a hand mixer until smooth.

In a separate large bowl combine dry ingredients. Pour wet into dry and blend w/a mixer until it forms a smooth dough.

Line a baking sheet w/parchment paper and dust the paper w/a good amount of arrowroot flour. Place the ball of cookie dough on the baking sheet and dush the top of the dough w/more arrowroot flour. Place another piece of parchment paper on top and roll it out to 1/4 in thickness. Dust the dough w/more arrowroot flour and dust the cookie cutters w/arrowrrot flour as well.

Cut out shapes. Place two currents for eyes on gingerbread men. Bake for 15 min and allow to cool before frosting.

To make the frosting, warm the coconut butter over med low heat in a small saucepan. Add the coconut oil and maple syrup and stir to combine. Heat until soft but not fully liquid.
