Ingredients

  • 1 lb ground chuck
  • 1/2 clove garlic, crushed
  • 1 can (4 oz) green chilies, finely chopped
  • 1 can (1 lb) tomatoes, undrained
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 quarts bite-size pieces crisp salad greens
  • 1 cup (4 oz) grated Cheddar cheese
  • 1 pkg (6 oz) corn chips, regular size
  • 1 cup chopped green onion
  • 1 medium tomato, coarsely chopped

Preparation

Step 1

1. In medium skillet, saute chuck (breaking up with fork) and garlic until chuck is browned - about 10 minutes. Drain excess fat.
2. Add green chiles, tomato, salt and pepper; mix well. Cook over low heat, uncovered, about 30 minutes.
3. Just before serving, in large chilled salad bowl arrange lettuce, cheese, corn chips and green onion with cooked meat mixture. Toss lightly until well combined. Garnish with chopped tomato. Serve immediately.
