Ingredients

  • 1/2 Walla Walla onion, finely chopped
  • 1 bunch green onions, chopped
  • 1 green bell pepper, chopped
  • 6 jalapeño chiles, minced
  • 1 Tbsp garlic, minced
  • 2 Tomatoes, chopped
  • 8 oz zesty italian dressing
  • 1 large can Hominy
  • 2 cans blackeye peas or 1 Cup dry, cooked
  • salt (to taste)
  • corn tortillas or tortilla chips
  • lime wedges
  • fresh cilantro for garnish

Preparation

Step 1

Mix all ingredients together and let marinate in the refrigerator for at least 2 hours. Salt to taste, if desired. Serve with corn tortillas or chips. Garnish with cilantro and or lime juice.
