Texas Caviar is a healthy and economical option to fattening dips. Use corn tortillas to scoop it instead of chips and you have a delicious and nutritious main course.

Ingredients
- 1/2 Walla Walla onion, finely chopped
- 1 bunch green onions, chopped
- 1 green bell pepper, chopped
- 6 jalapeño chiles, minced
- 1 Tbsp garlic, minced
- 2 Tomatoes, chopped
- 8 oz zesty italian dressing
- 1 large can Hominy
- 2 cans blackeye peas or 1 Cup dry, cooked
- salt (to taste)
- corn tortillas or tortilla chips
- lime wedges
- fresh cilantro for garnish

Preparation
Step 1
Mix all ingredients together and let marinate in the refrigerator for at least 2 hours. Salt to taste, if desired. Serve with corn tortillas or chips. Garnish with cilantro and or lime juice.
