Ingredients

  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • teaspoon baking soda
  • 2 teaspoons sugar
  • teaspoon salt
  • cup unsalted butter, cut into pieces and chilled
  • cup buttermilk, cold

Preparation

Step 1

In a large bowl sift all dry ingredients.
Take half of the flour mixture and place in Bosch food processor with the chilled butter. Then add it back into the other flour and using a spatula, stir well.
Make a well in the center of the mixture and pour about of the buttermilk in. Using the spatula start stirring, adding the remainder buttermilk as needed to make the mixture come together. (Should still see some dry)
Turn out onto a floured pastry mat, and using both hands combine in two or three turns, only until it comes together. DO NOT WORK THE DOUGH; you do not want any gluten to form. Place in a rectangle shape about 6x4. Using a cutter cut out 6 biscuits.
Preheat oven to 425 and place the biscuits on a sheet pan spaced at least 2 apart and place in the fridge/freezer for 10 or 15 minutes.
Brush the tops of the biscuits with buttermilk and bake for 12-14 minutes.
Tops should be a nice golden brown
