BBQ Chicken Quesdillas**

Ingredients
- 1/2 cup BBQ sauce
- 1/2 cup sour cream
- 3 cups cooked chicken, shredded
- 1 cup red pepper, chopped
- 8 green onions, sliced
- 10 - 6 " flour tortillas
- 2 cups Monterey Jack cheese, shredded
- 1/4 cup vegetable oil

Step 1
In a small bowl combine BBQ sauce and sour cream. In another bowl combine chicken, red pepper, and green onion. Salt and pepper to taste. Spoon 2 Tbl. BBQ mixture onto each tortilla. Divide chicken mixture evenly on each tortilla. Sprinkle with cheese. Fold tortillas in half. Heat skillet wtih small amount of oil. Place tortillas 2 at a time in skillet over medium high heat. Cook until golden brown turn and cook other side until golden brown. Makes 2 1/2 dozen.
