Ingredients

  • Marinade:
  • 1 medium zucchini
  • 1 summer squash
  • 1 eggplant
  • 1 large yellow pepper
  • 1 large red pepper
  • 1 large Vidalia onion
  • 1 tbsp. minced fresh garlic
  • 1/2 cup red wine vinegar and balsamic vinegar
  • 1/2 cup olive oil
  • chopped fresh basil
  • thyme
  • oregano
  • salt and pepper

Preparation

Step 1

Cut ends off zucchini, squash and eggplant and slice lengthwise in 1/4 inch slices. Place in a bowl. Add yellow and red peppers cut in 1 inch strips. Slice Vidalia onion and add to vegetables. Mix marinade of garlic, vinegars, olive oil, some chopped fresh basil, thyme and oregano. Salt and pepper to taste. Toss with vegetables and let marinate 1 hour.
Grill in a grilling pan until cooked as desired.
