Grandma Pat's Mock Ravioli

Ingredients

  • Meat:
  • 1 pound ground beef
  • 1 pound ground pork sausage
  • 1 chopped onion
  • 2 cloves of garlic, finely chopped
  • 12-24 inches of fresh rosemary, cut up (stolen from the Brown’s front yard!)
  • 1 package frozen, chopped spinach (the square one)
  • 3/4 C spinach liquid and water
  • 1 can 14oz tomato sauce
  • 1/2 6oz can tomato paste
  • 1/2 cup bread crumbs (Progresso with Italian seasoning)
  • 2 eggs
  • 1/2 c fresh parmesan, assiago or romano shredded cheese
  • Salt and pepper to taste
  • 16 oz of cooked pasta (bow ties)
  • sauce:
  • In other pan, brown 1/4 of ground beef and 2 Tbsp of sausage. Add 1 minced garlic clove, 1 tsp rosemary, 1 tsp allspice, 3 cans of tomato sauce (6 oz each), 2 cans of water, 1 tsp salt. Bring to boil and simmer 2 hours.

Preparation

Step 1

Brown ground beef and sausage. Then, add onion, garlic, rosemary, salt, and pepper.
Simmer this mixture for 1 hour. Drain and cool.

Cook spinach according to package. Drain and cool.

Then combine meat mixture, spinach, bread crumbs, eggs and cheese.

In ungreased pan, layer ½ of the pasta, ½ of the meat mixture, ½ of the sauce and sprinkle with a little more cheese. Repeat the layering one more time.

Bake at 350 degrees until heated all the way through and cheese on top is melted.
