Peppertrees Shortbread Cookies

Ingredients
- 1/2 lb. butter
- 1 cup and 2 T sugar
- 1/2 pound margarine
- 1 t pure vanilla
- 4 cups flour

Step 1
Let butter and margarine soften at room temp until easy to handle. Add the vanilla and sugar, beat together until well blended. Slowly work in 1/2 cup of flour at a time. Work the last half of the flour in by hand. The resulting dough should be soft, easy to handle and not at all sticky or greasy.
Divide into 3 parts and shape into one inch thick rounds. Place each one in a ungreased pie plate or tin. Pinch the edges like a pie crust and prick the top with the fork tines. Score into eight pie shaped wedges with a knife. Bake for approximately 45 mins until golden brown. If necessary, turn around while in oven to ensure even baking.
Wrap with plastic wrap. Shortbread keep well in a tin for a week and for 3 months in freezer.
