Non-fried Fried Rice

Fried rice traditionally is a way to use day-old rice and other leftover ingredients. I wondered if I could create a healthier version of the dish without all of the oil.

Ingredients
- 1 c. multigrain rice
- 1 +3/4 c. water
- 1 carrot, shredded
- 4 green onions, diced
- 1/2 white or yellow onion, diced
- 1 T. soy sauce
- 1 t. Thai chili paste
- 1 T. finely minced ginger
- 1 clove garlic, minced
- Water
- Protein, like shrimp
- 3 hard boiled eggs, peeled and diced
- Bean sprouts

Step 1
1. Bring the 1+3/4 c. water, soy sauce, Thai chili paste, carrots, green onions, and onions to a boil on the stove. Add the rice, stir, lower the heat, and cover. Check the rice for doneness after about 20 minutes.
2. While the rice is cooking, saute the ginger and garlic in water. Heat about 1 T. water in a pan and begin to saute the ginger and garlic. Keep a cup of water by the stove and add ~1 t. to the pan whenever it starts to dry out. Cook until the ginger and garlic have softened and gained a bit of color. Add the protein and cook.
3. When the rice is done, mix with the chopped eggs and protein. Top with the sprouts.
