Ingredients
- 1 sirloin pork roast (Costco)
- 2-4 tablespoons olive oil
- 1 small white onion diced
- 1 cup brown sugar
- 1 12 oz can of coke
- 1 1/2 cups water
- 1 12-16oz jar of your favorite salsa

Preparation
Step 1
In the bottom of the 6 quart B/R/K pressure cooker place 2 tablespoons olive oil. Brown the meat well on all sides. Remove and cook the onion for 2 minutes in the remaining oil. Use the coke to deglaze the bottom of the pan, add the sugar, salsa and water. Stir well. Place a meat rack in the bottom of the cooker and add the roast back to the pan. Lock the lid on, placing the dial on #2. Cook for 45 minutes. Release naturally.
Tip you can cut the meat into fourths and cook in 20 minutes.
