Ingredients

  • Crepe filling
  • 1 tablespoon butter
  • 1 each onion
  • 1 each green pepper, coarsely chopped
  • 1 each pepper, red, chopped coarsely
  • 1 bunch green onion
  • 4 cloves garlic
  • 9 ounces green chili, chopped, drained
  • 1 1/2 cups whipping cream
  • 1 cup Swiss cheese, shredded
  • 2 1/2 cups chicken breasts, shredded
  • 2 teaspoons Cajun Magic Poultry Magic Seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • CREPES
  • 1 cup flour
  • 1/2 cup cornmeal, yellow
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1 cup chicken broth
  • 3 each eggs
  • 1 cup cheddar cheese, shredded

Preparation

Step 1

Filling:
Melt butter in a large skillet over medium heat; add chopped onion and next 4 ingredients, and cook, stirring constantly, 5 minutes or until tender.
Stir in chiles and whipping cream; bring to a boil. Reduce heat, and simmer 15 minutes.
Stir in cheese and remaining ingredients; cook for 3 minutes.
Yields 4 cups

Crepes
Position knife blade in food processor; add first 6 ingredients. Process until smooth. Chill at least 2 hours.
Coat an 8-inch nonstick skillet with cooking spray, place over medium heat until hot. Pour 1/3 cup batter so batter covers bottom of pan. Cook 1 minute or until crepe can be shaken loose from pan. Turn crepe over; cook about 30 seconds. Place on a towel to cool. Repeat with remaining better.
Spoon about 1/2 cup Crepe Filling on half of each crepe; roll up, and place seam side down, in a lightly greased 13x9 baking dish. Sprinkle crepes evenly with cheese.
Bake at 300 for 5 minutes or until cheese melts.
