Ingredients

  • ISLAND K-BOBS:
  • 1 lb. boneless, skinless chicken breast (cut into 18 - 24 pieces)
  • 6 oz. can pineapple juice
  • 1/2 tbsp. lite soy sauce
  • 1 tbsp. Lawry's Havana Garlic & Lime Marinade
  • Ground garlic pepper
  • Black pepper
  • Fresh Vegetables of Your Choice, sliced
  • SUGGESTED:
  • Tomatoes
  • Bell Peppers
  • Onions
  • Mushrooms
  • 1/2 can peach slices
  • RICE:
  • 2 3/4 cups liquid (juice from canned peach slices plus water)
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground ginger
  • 1 1/2 cups long grain rice
  • 1/2 can peach slices, chopped (reserve juice)
  • 1/8 cup almond slices

Preparation

Step 1

ISLAND K-BOBS:
1. Pour pineapple juice, soy sauce, garlic & lime marinade, pepper and garlic pepper into ziploc bag. Add chicken. Marinade in refrigerator for at least 2 hours (or overnight).
2. Place sliced vegetables, chicken and one slice peach on skewers.
3. Grill until cooked (approximately 20 minutes).
4. Serve over "Island Rice".

ISLAND RICE:
1. Heat liquid (water and peach juice), cinnamon, cloves and ginger to boiling. (Consider adding nutmeg as well.)
2. Add rice, cover and reduce heat. Simmer for 20 minutes or until liquid is absorbed.
3. Stir in chopped peach slices and almonds.
4. Serve with "Island K-Bobs"!
