Ingredients

  • 2 T olive oil
  • 1/2 lb sausage (use low fat)
  • 1 onion chopped
  • 4 garlic cloves, chopped
  • 2 cans of kidney beans-drained and rinsed
  • 2 cups chicken broth (use low sodium)
  • 1 t creole seasoning or 1/2 t cayenne pepper
  • 1 cup uncooked rice (makes 3 cups cooked)

Preparation

Step 1

1. heat oil in heavy pot and add sausage, onion and garlic and saute till onion is brown, about 15 minutes.

2. mix in kidney beans, broth and creole seasoning. reduce heat to medium low and simmer till flavors are blended and mixture is thick.

3. stir occasionally, cooking about 30-40 minutes total.

4. serve over rice.

(this freezes well but don't freeze with rice)
