Ingredients
- 2 ounces semi-sweet chocolate
- 3 tbsp butter
- 2 tbsp vegetable oil
- 1 cup sugar, divided
- 1 cup all-purpose flour
- 5 tbsp cocoa
- 1/2 tsp baking powder
- Pinch salt
- 2 tbsp apricot jam
- 3 egg whites
- 1/4 cup nonfat fudge sauce

Preparation
Step 1
Preheat oven to 325 F. Lightly spray 8-by-8-inch pan with nonstick vegetable coating and set aside.
Melt chocolate, butter and oil in a small saucepan over low heat. Remove and set aside.
In a medium bowl, sift together 1/2 cup of sugar, flour, cocoa, baking powder and salt. Add apricot jam and mix well.
In a separate bowl, whip egg whites and remaining 1/2 cup sugar until soft peaks form. Gently fold 1/2 chocolate mixture into egg white mixture and mix until incorporated. Fold in remaining chocolate mixture. Fold flour mixture into chocolate mixture.
Pour batter into prepared pan and bake 30 minutes, or until knife comes out clean when inserted in center.
Remove from oven. Cool slightly and drizzle with nonfat fudge sauce.
