Chicken with Apples and Raisins

Ingredients

  • 2 Tbsp. butter
  • 1 Tbsp. EVOO
  • 1 1/2 lbs. skinless boneless chicken
  • Salt and Pepper
  • 1 large apple, cut into 1/2 inch pieces
  • 1/3 cup raisins
  • 1/2 tsp. cinnamon
  • 1 box (5.8 oz) couscous
  • lemon wedges

Preparation

Step 1

In a large skillet, melt butter in the EVOO over medium-high heat. Season chicken with salt and pepper, add to the pan and cook, 8 minutes. Transfer to a plate and cover with foil.

Add the apples, raisins and cinnamon to the skillet with 1/3 cup water and scrape up the browned bits; season with salt and pepper. Cover and cook over medium heat for 5 minutes. cut the chicken into chunks and stir into the mixture.

Meanwhile, prepare the couscous according to the package.

Serve chicken and apple mixture over couscous.
