Ingredients

  • 2 cups sifted all-purpose flour
  • pinch of salt
  • 1 tsp baking powder
  • 2-4 TB sugar
  • 3/4 cup butter (1 and 1/2 sticks)
  • 1 medium egg, beaten
  • 1-2 TB liquid (milk, cream, water, or rum)
  • Grated lemon rind (optional)

Step 1

Combine flour, salt, baking powder, and sugar. Chop in butter until very fine. Add beaten egg and liquid and the lemon rind (if used). Work with fingers until smooth like pie dough. Press evenly, using fingers and heel of palm, over bottom and sides of a 9" round cake pan, fluting above the rim, or shape as indicated in recipes. Or, chill the dough for several hours, then roll out between waxed paper to 1/4" thick. Add filling. Bake in oven preheated to 400 degrees F until golden and flaky-crisp.
