Ingredients
- 3 lbs. roma tomatoes
- 1/4 cup olive oil
- 3 oz. Spanish onion, cut into small dice
- 1 Tbsp. chopped garlic
- 1 Tbsp. chopped fresh basil
- pinch of chopped fresh thyme
- 1 1/2 tea. salt
- 3 grinds black pepper
- 1 tea. sugar

Step 1
Prepare a pot of boiling water and a bowl of ice water.
With a paring knife, remove the stem from each tomato and score the opposite end. Drop tomatoes into the boiling water just long enough for the skin to crack, then remove and place immediately in ice water.
Peel the tomatoes and roughly chop.
Heat oil in a saucepot over medium heat. Add onions and cook until translucent. Add garlic and tomatoes. Reduce heat to a simmer and cook uncovered for 1 hour, tirring occasionally.
When the sauce has cooked down to the desired consistency, add herbs and season to taste with salt, pepper and sugar.
