Ingredients

  • 1 pound Italian sausage,hot or a combination,casings
  • removed and meat cut into 1-inch pieces
  • 1 tablespoons olive oil
  • 1 large onion,cut into 1/2 inch dice
  • 1 large sweet green pepper,cut into 1/2-inch dice
  • 1 large sweet red pepper,cut into 1/2 inch dice
  • 2 tablespoons tomato past
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 oz small pasta,such as small shells or wagon whells
  • 3 cups boiling water
  • Grated Parmesan cheese

Preparation

Step 1

1.Brown sausage in oil in 10-inch skillet with 2-quart capacity,5 minutes.Add onion and peppers;saute 2 minutes.Add tomato paste,salt and pepper.
2.Add pasta and boiling water,stirring to distribute ingredients evenly.Cover and cook,stirring occasionally.for the least amount of time suggested in the packagrdirections or until pasta is al dente,firm but tender.Check halfway through cooking time;add a little more water,if necessary.
3.Serve immediately with grated cheese.
