Ingredients

  • 1 cup plus 3 Tbsp. sugar, divided
  • 2/3 cup Watkins pure cocoa
  • 1/3 cup plus 1 Tbsp. all purpose flour
  • 1/2 tsp. Watkins Baking Powder
  • 5 egg whites, divided
  • 1/4 cup Watkins Original Grapeseed Oil
  • 1 1/2 tsp. Watkins Vanilla, divided
  • 3/4 tsp Watkins Peppermint Extract, divided
  • 6 oz. fat-free cream cheese

Preparation

Step 1

Preheat oven to 350F. Spray 8-inch square baking pan with watkins cooking spray. Combine 1 cup sugar, cocoa, 1/3 cup flour and baking powder in large bowl; mix well. Beat 4 egg whites lightly in small bowl; beat in oil, 1 tsp. vanilla and 1/2 tsp. peppermint extract. Add to dry ingredients; mix well. Spread batter into prepared pan.

Beat cream cheese, remaining 3 Tbsp. sugar, 1 Tbsp. flour, 1 egg white, 1/2 tsp. vanilla and 1/4 tsp. peppermint extract in medium bowl with electric mixer at low speed until smooth. Spoon cream cheese mixture by tablespoonfuls over batter. Cut through layers with knife to marble. Bake for 22 minutes or until toothpick inserted into center comes out almost clean. Cool in pan on wire rack.
