Ingredients

  • Crust:
  • 1 cup graham cracker crumbs
  • 3 tbsp sugar
  • 3 tbsp margarine, melted
  • Filling:
  • 3 (8 ounce) packages nonfat cream cheese product, softened
  • 3/4 cup sugar
  • 2 tbsp flour
  • 3 tbsp lemon juice
  • 3/4 cup egg substitute
  • 1 (8 ounce) carton nonfat lemon yogurt
  • Topping:
  • Sliced fresh strawberries, if desired OR
  • Raspberry sauce OR
  • Tropical fruit

Preparation

Step 1

In small bowl combine graham cracker crumbs, sugar and margarine; mix well. Pat on bottom of 9- or 10-inch springform pan; set aside. Heat oven to 350 F.

In medium bowl beat cream cheese, sugar and flour together until light, fluffy and smooth. Gradually add lemon juice and egg substitute; beat well. Add lemon yogurt and mix thoroughly. Pour over prepared crust.

Bake 60 to 70 minutes or until center of cake is set. Gently run tip of knife between cake and edge of pan. Cool to room temperature before removing rim of pan. Chill.

Serve, if desired, with sliced fresh strawberries, a raspberry sauce or tropical fruits.
