Sugar, spice, and stats that are nice... That's what you get with this inverted take on the classic Thanksgiving dessert!

Ingredients

  • One 15-oz. can pure pumpkin (not pumpkin pie filling)
  • One 12-oz. can evaporated fat-free milk
  • 2/3 cup granulated white sugar
  • 1/2 cup fat-free liquid egg substitute
  • 2 tsp. pumpkin pie spice
  • 2 sheets (8 crackers) low-fat cinnamon graham crackers, finely crushed
  • Optional toppings: Fat Free Reddi-wip, cinnamon

Preparation

Step 1

Preheat oven to 350 degrees. Spray a deep-dish pie pan with nonstick spray.

In a large bowl, thoroughly whisk all ingredients except graham crackers.

Transfer mixture to the pie pan. Bake until partially firm, about 45 minutes.

Refrigerate until completely chilled and firm, at least 3 hours.

Sprinkle with crushed graham crackers. Enjoy!

How many eggs would I use if I wanted to substitute with REAL eggs?

What is pumpkin pie spice? We dont get it in the UK.

Its a blend of seasonings - make mine as follows:

4 tsp Ground Cinamon; 2 tsp Ground Ginger; 1 tsp Allspice; 1 tsp Nutmeg. I store it in a container so I always have some on hand. Sometimes I add clove to it depending on what I am using it in.

Can you exchange the sugar with Splenda?

Has anyone tried exchanging the sugar for splenda, and where do I get the egg substitute?

According to Splenda.com:

"Sweeteners do more than just provide a sweet taste. Some sweeteners also lend color, texture, or flavor and prevent moisture loss. SPLENDA® Granulated works best in recipes where sugar mainly plays a sweetening role, such as fruit fillings, cheesecakes, custards, sauces, and marinades. In these recipes, you can feel comfortable substituting SPLENDA® Granulated Sweetener for other sweeteners.

In some recipes, such as cakes, cookies, and muffins, you may need to make a few changes in the recipe to have great results. Find out more in Cooking and Baking Tips.

Made this for Thanksgiving using 2 whole eggs, otherwise no substitutions. Loved it! So did the guests. Will try it next time with the Splenda Sugar Blend, which I've used successfully in cookies.
