Unfried refried beans

Ingredients
- 2 400 g. cans of pinto beans (~ 14 oz. each)
- 1 c. vegetable, chicken, or beef stock
- 1 onion, peeled and quartered
- 3 cloves garlic, peeled
- 1 T. cumin (The flavor is improved if you dry toast it first.)
- 1 t. Latana salt-free seasoning (A fajita seasoning blend can also be used, but make sure to adjust the salt.)
- 1/2 t. Cholula or other hot sauce, optional
- Salt to taste
- 4 green onions, diced

Preparation
Step 1
1. Drain and rinse the beans.
2. Add the beans, stock, onion, and garlic to a pot. Cook on medium heat until half of the liquid evaporates.
3. Remove the onion and garlic and mash the beans with a potato masher.
4. Put the mashed beans and dry seasonings into a pot and cook over medium heat until the desired consistency.
5. Top with green onions.
