Norma Jean was the manager of the Sandpoint Senior Center in Sandpoint, ID when I (Cheryl Costigan) worked for Area Agency on Aging and had an office there. Norma is from Canada and would make these every Christmas and share them with the office staff. They were fattening and wonderful.

Ingredients

  • First Layer:
  • 1 cup packed brown sugar
  • 1 cup corn syrup
  • 6 tbsp butter
  • 1 tsp vanilla
  • 2 cups peanut butter
  • 2 cups crushed corn flakes
  • 2 cups Rice Krispies
  • Second Layer:
  • 1/2 cup butter
  • 1/3 cup canned milk
  • 4 tbsp vanilla custard powder
  • 4 cups icing sugar
  • Third Layer:
  • 8 squares (1 box) semi-sweet chocolate
  • 4 tbsp butter

Preparation

Step 1

First Layer: Mix brown sugar, corn syrup and butter in a saucepan. Bring to a boil, stirring constantly. Boil 1 minute. Remove from heat. Add peanut butter, vanilla and cereals. Mix. Press into buttered 16-by-11-inch cookie sheet. Let cool.

Second Layer: Whip together with electric mixer until fluffy and spread over first layer. Let cool.

Third Layer: Melt chocolate and butter together and spread evenly over top. Chill and cut into bars.
