Ingredients
- 1 package (8 ounces) cream cheese, softened
- 3 tbsp sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 cup whipped dessert topping
- 1/2 cup raspberry jam
- 1 can (15 ounces) natural style peach slices, well drained
- 1/4 cup gingersnap cookie crumbs, optional

Preparation
Step 1
Blend cream cheese, sugar, lemon juice, vanilla and whipped topping in a bowl.
Layer cheesecake mixture, raspberry jam and peaches in parfait glass, wine glass, or any tall 8 ounce glass. Repeat layers. Sprinkle with cookie crumbs. Garnish with whipped cream and mint sprig, if desired. (Cut peaches into chunks, if desired).
