Ingredients
- 1 C. sliced carrots
- 1 C. sliced parsnips
- 1/2 c. sliced onion, separated into rings
- 1 T. olive oil
- 1 C. julienned potatoes
- 1 C. julienned sweet potatoes
- 3/4 t. ground ginger
- 1/2 C. vegetable broth
- 2 t. orange juice concentrate
- 1/2 t. salt
- 1/8 t. crushed red pepper flakes

Preparation
Step 1
In wok, stir fry carrots, parsnips and onion in hot oil for 2 mins. Add potatoes and sweet potatoes and ginger. Stir fry for 5 to 7 mins. or until vegetables are crisp tender. Add the broth, orange juice, salt and red pepper. Cover and cook for 5 to 7 mins. or until tender. Uncover; cook and stir until sauce is thickened, about 2 minutes.
