Ingredients

  • 1 cup buttermilk
  • 3 egg whites
  • 1 tablespoon sugar
  • 1 tablespoon canola oil
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat or all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup fresh or frozen blueberries

Step 1

In a large bowl, whisk together the buttermilk, egg whites, sugar and oil. In a separate bowl, mix in the flour, baking powder and baking soda. Add the flour mixture to the buttermilk mixture, stirring until combined. Mix in blueberries. In a skillet, pour enough mixture for desired pancake size. Cook pancakes 1-2 minutes on each side or until lightly browned. Enjoy!
