Zucchini-Wrapped Pork Tenderlion

  • 2-3 Zucchini
  • 12-16 oz Pork Tenderlion
  • Pesto
  • S & P

Preparation

Step 1

Brine tenderloin if desired. Once brined, slice tenderoin into medalions. Using a vegitable peeler, make long peels of zucchini to wrap around pork.
Seaon pork with S & P and wrap with zucchini like a package. Place on baking sheet and spray with cooking spray. Bake at 450 for about 15min (160). Before serving, top each package with pesto.
