These cookies are a brownie-chocolate chip cookie hybrid. You can omit the espresso powder if you like. An added bonus: There's only one bowl to clean.

Ingredients

  • 1/2 cup butter, softened
  • 1/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp instant espresso powder (optional)
  • 1/4 cup unsweetened cocoa powder
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semisweet chocolate chips

Step 1

Preheat oven to 375 F. Line a baking sheet with parchment paper.

Combine butter and sugars in a mixing bowl. Beat with a mixer at medium-high speed until light and fluffy, about 2 minutes. Add egg, vanilla and espresso powder, mixing until well combined. Add cocoa, flour, baking soda and salt, mixing on low speed until dry ingredients are incorporated. Add chocolate chips and mix for a few seconds, until evenly distributed.

Drop dough by tablespoons onto a baking sheet, about 1 1/2 inches apart. Bake about 8 minutes, until cookies look set in center.

Cool 2 minutes on baking sheet, then transfer to a wire rack to cool completely.
