Aebleskiver (Danish Pancakes)

Ingredients
- 1 stick butter, melted
- 3 eggs, separated
- 1 cup milk
- 2 tablespoons sugar
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoons salt
- 1/2 teaspoon freshly ground cardamom
- butter
- applesauce or jam
- powdered sugar

Preparation
Step 1
In a large bowl, blend the butter, egg yolks, milk and sugar. In a medium bowl, combine the flour, baking powder, salt and cardamom. Stir the dry ingredients into the egg yolk mixture.
In a clean bowl, beat the egg whites until stiff but not dry. Fold the egg whites into the flour-egg yolk mixture. Heat the aebleskiver pan over medium-low heat until a drop of water sizzles when it is dropped into the pan (If the heat is too high, the centers of the pancakes will be doughy.) Spoon 1/2 teaspoon butter into each cup and let it melt. Spoon 1 rounded tablespoon of batter into each cup. Cook for about 1 minute on each side, turning the pancake over with the turning sticks. If you wish to fill the pancakes, place 1 teaspoon applesauce or jam into the center of the pancake before turning. For a traditional Advent party, put an almond into the center of the pancakes. Dust each aebleskiver with powdered sugar and serve hot.
