Ingredients
- 2 1/2 cups chicken broth
- 1 can cream of chicken soup
- 3 tablespoons olive oil
- 1 large onion, chopped
- salt and pepper
- 4 small chicken breasts cut into bite size pieces
- 1 1/2 cups basmati rice
- paprika, garlic powder or other seasonings to sprinkle over

Step 1
Bring broth cream of chicken soup to a boil. While you are waiting for it to boil, add olive oil to a large skillet (that has a lid) set over medium-high heat. Add onions. Cook until onions soften, about 4 minutes.
Add rice to the pan and stir until each grain is covered in oil. Nestle chicken in rice, add salt, pepper and other seasonings over chicken. Pour in the broth mixture over chicken and rice. Reduce heat to simmer and cover. I had to stir occasionally so it didn't stick to the bottom.
Cook 2o minutes, until all water is absorbed and chicken is cooked through.
