Ingredients

  • 1 lb ground beef
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 2 cups salsa
  • 1 can (19 oz, 540 ml) diced tomatoes
  • 2 cups frozen corn, thawed
  • 12 flour tortillas (6 inch)
  • 1 cup TexMex shredded cheese, divided

Preparation

Step 1

Preheat oven to 375° F.
Brown meat with peppers in large skillet; drain. Stir in salsa, tomatoes and corn. Spread 1 cup onto bottom of 9" x 13" baking dish. Top with 6 tortillas, overlapping to fit. Cover with half of the meat and cheese mixtures. Add remaining tortillas and meat mixture. Cover with foil. Bake 25 - 30 minutes, or until heated through. Top with remaining cheese; let stand, covered, 5 min. or until melted.
