Zucchini Fritters with Green Goddess Dressing

Ingredients

  • Dressing:
  • 1 c Mayo
  • 1/2 c Basil
  • 1/4 Chives, Thyme, Parsley (any herb you choose)
  • 1-3 T White Vinegar
  • 1 Anchovy
  • Fritters:
  • 1 1/2 # Zucchini (about 6)
  • Kosher Salt
  • 6 1/2 T Flour
  • 1/2 t BP
  • 1/3 c Beer
  • 1/3 c Tofuti or cream cheese or goat cheese

Preparation

Step 1

Dressing:

Place all ingredients in blender and blend until smooth. Refrigerate.

Fritters:

Grate zucchini into a collander and place 1T+ kosher salt on top. Drain for about 30min tossing occationally.
Press zucchini into a towel and squeeze dry.
Mix dry ingredients in bowl. Add beer and toffuti/cheese and stir until combined. Add zucchini and pepper to taste (may need to add 1 egg for better consistancy).
Drop by 1/4c fulls into pan and saute like a pancake. (can use oil of spray). Transfer to baking sheet and finish in oven. Can be made ahead and reheated in oven.
Serve with dressing.
