IMO Cheesecake

This recipe was given to me (Cheryl Costigan) by my next door neighbor Elizabeth Jordan when I lived at 53 Sierra Way in Chula Vista, CA back in the 1970's.

Ingredients

Topping:
Graham cracker pie crust, 10-inch
6 ounces cream cheese
2 cups IMO
2 eggs
1/2 cup sugar
1 tsp vanilla
Pinch of salt
1 cup IMO
2 tbsp sugar
1 tsp vanilla

Preparation

Step 1

Combine sugar and cream cheese. Add eggs and beat well. Add IMO, vanilla and salt. Pour into graham cracker crust in 10" pie dish and bake 50 minutes at 325 F. Spread with topping. Bake 5 minutes longer. Chill 4 hours.

Topping: Mix IMO with sugar and vanilla.
