Ingredients
- 1 1/2 cups flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup shortening
- 3/4 cup sugar
- 1 egg
- 1 tbsp lemon juice
- 2 tsp grated lemon peel

Step 1
Stir together flour, baking soda and salt; set aside. Cream well shortening and sugar. Beat in egg, lemon juice and peel. Stir in dry ingredients. Shape in two (6-inch) rolls; wrap tight in waxed paper or plastic wrap. Chill overnight. Slice slightly more than 1/8-inch thick. Place 1 inch apart on ungreased baking sheets. Bake in preheated 375 F oven 8 to 10 minutes or until golden around edges. Remove to racks to cool.
