Ingredients

  • Chocolate Icing:
  • Nonstick spray coating
  • 1/4 cup unsalted margarine
  • 2/3 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 egg white
  • 1/2 tsp vanilla
  • 3/4 cup all-purpose flour
  • 1/3 cup skim milk
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 cup chopped walnuts or pecans
  • 1 tsp powdered sugar
  • 1/2 cup sifted powdered sugar
  • 1 tbsp unsweetened cocoa powder
  • 1/4 tsp vanilla
  • 1 to 2 tbsp skim milk

Preparation

Step 1

Spray a 9-by-9-by-2-inch baking pan with nonstick coating; set aside.

In a medium saucepan melt the margarine. Remove from heat. Stir in the sugar and cocoa powder until combined.

Add egg white and vanilla to saucepan. Using a wooden spoon, lightly beat just until combined. Add flour, milk, baking powder and baking soda. Beat with the spoon until combined. Stir in walnuts or pecans. Spread the batter into the prepared baking pan.

Bake in a 350 F oven for 16 to 18 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on a wire rack. Sprinkle with the powdered sugar. Drizzle with Chocolate Icing; let stand for 30 minutes or until Chocolate Icing is set. Cut into bars.

Chocolate Icing: In a small mixing bowl stir together sifted powdered sugar, unsweetened cocoa powder, vanilla and enough skim milk (1 to 2 tablespoons) to make an icing of drizzling consistency.
