Ingredients

  • 1 cup lentils
  • 1 small bay leaf
  • 2 tbsp red onion, diced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 cups cold water
  • 4 tbsp canola oil
  • 3 tbsp apple cider vinegar
  • Parsley, for garnish, chopped fine
  • 1 or 2 scallions, diced, optional

Preparation

Step 1

Place lentils, bay leaf, onion, salt and pepper in saucepan. Add cold water. Simmer until tender (about 40 minutes).

Drain. Discard bay leaf. Add oil and vinegar. Let cool at room temperature. When ready to serve, sprinkle with parsley and/or scallions.
