Ingredients

  • 1 (16 ounce) can solid pack pumpkin
  • 1/2 pound bacon, cooked, crumbled (optional)
  • 1/4 cup onion, finely chopped
  • 1 (2 1/2 ounce) jar sliced mushrooms, drained
  • 2 eggs, lightly beaten
  • 1 (13 ounce) can evaporated milk
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp flour
  • 1 (10 inch) pie shell, unbaked

Preparation

Step 1

Preheat oven to 375 F. Combine pumpkin, bacon, onion, chopped green pepper, sliced mushrooms and eggs; mix well. Gradually add milk, stirring until blended. Toss grated Parmesan cheese with flour. Fold into pumpkin mixture. Pour into unbaked pie shell. Bake 60 minutes or until knife inserted near center of pie comes out clean.
