Ingredients

  • 1 pound ground turkey sausage
  • 2 cups baby spinach finely chopped
  • 1 cup mushrooms chopped
  • 1/4 cup sun-dried tomatoes in oil finely chopped
  • 1 tsp basil
  • 1/4 tsp oregano
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 8 whole eggs large
  • 1 tbs chives
  • 1/2 cup bell pepper chopped

Directions

Brown turkey sausage (to make it even faster you can use precooked turkey sausage) in skillet and let cool for 10 minutes. In large bowl, combine spinach, sausage, tomatoes, basil, oregano, onion powder & salt. In medium bowl, whisk the eggs. Pour into the sausage mixture and mix thoroughly. Divide the mixture evenly among the muffin cups and top with chives. Bake for 30 minutes or until a wooden pick inserted in the center of a muffin comes out clean.



The great thing about this recipe is you can use whatever vegetables you have on hand. I've made it with broccoli, zucchini and kale so far. Just don't leave out the sun-dried tomatoes, in my opinion they make the muffin!
