Ingredients

  • 1 lb. very lean ground beef
  • 1 tbsp. salad oil
  • 1 tsp. each salt, pepper, garlic powder
  • 1 yellow onion, finely chopped
  • 1/2 lb. fresh mushrooms, sliced
  • 1 can (8 oz.) tomato sauce
  • 1 carton (8 oz.) commercial sour cream
  • 1 tsp. each basil and oregano, crushed
  • 8 oz. cottage cheese
  • 2 pkgs. (10 oz. each) frozen chopped spinach thawed
  • 1/2 c. grated parmesan cheese
  • 1/2 c. grated longhorn cheese
  • 1/3 c. grated parmesan cheese

Preparation

Step 1

Brown meat in oil stirring to prevent burning. Sprinkle on salt, pepper, and garlic powder. Add onions and mushrooms and cook over low heat about 5 minutes, stirring occasionally. Drain off any excess liquid. In a large bowl combine the tomato sauce, sour cream, basil and oregano stir in the cottage cheese. Add all this to meat mixture. Put thawed spinach in colander and press out all the liquid. Add spinach to above. Add 1/2 cup parmesan and 1/2 cup longhorn. Mix in. Put all in greased 9 x 13 inch flat baking dish and cover. Top with remaining cheeses. Refrigerate when ready bake uncovered, at 350 degrees for 30 minutes or til hot through.
