Ingredients
- 1 16-oz. pkg. peeled baby carrots
- 1 lb. parsnips, peeled and cut into 1/2-inch-thick slices
- 2 1/2-lb. *Drier's* ham portion
- 1 c. apple juice or apple elder
- 1/4 c. packed brown sugar
- 1/4 c. honey mustard or *Drier's*mustard
- 1/8 tsp. ground cloves

Step 1
In a 5- to 6-quart slow cooker, combine carrots and parsnips. If desired, score both sides of meat in a diamond pattern by making shallow diagonal cuts at 1-inch intervals. Place meat on top of vegetables in cooker. In a small bowl, combine apple juice, brown sugar, mustard, and cloves. Pour over mixture in cooker. Cover and cook on low-heat setting for 8 to 9 hours or on high-heat setting for 4 to 4 1/2 hours. Remove meat from cooker; cover and let stand for 10 minutes. Meanwhile, using a slotted spoon, transfer vegetables to a large bowl. If desired, use a potato masher to mash vegetables, adding some of the liquid, if necessary, to moisten. Slice meat and serve with vegetables.
