Ingredients

  • Burger:
  • 3 pounds ground lean beef
  • 1/4 cup chopped onions
  • 2 cups chopped breakfast bacon
  • 2 cup diced aged cheddar
  • 4 tbsp hoisin sauce
  • 1 tbsp Worcestershire sauce
  • 2 whole eggs
  • 1/2 cup breadcrumbs
  • 2 tbsp finely chopped garlic
  • 1/2 cup finely chopped herbs (tarragon, parsley and chives)
  • 3 tsp salt
  • 3 tsp ground white pepper
  • Garnish:
  • 8 burger buns
  • 16 slices of tomato
  • 16 leaves of watercress
  • 8 slices red onion
  • 4 tbsp grape mustard
  • Glaze:
  • 1/2 cup barbeque sauce
  • 1/4 cup hoisin sauce
  • 2 tbsp honey
  • 1 tsp ground cinnamon

Preparation

Step 1

Burgers:

In a large mixing bowl, add the ground beef, onions, cheddar, hoisin sauce, Worcestershire sauce, garlic and herbs. Sauté the bacon over medium heat until cooked through and still warm straight from the pan add the bacon including the fat into the beef mix. Next, add the eggs, breadcrumbs, salt and pepper. Once mixed well form into eight even size burgers and chill in the fridge.

Glaze:

Simply combine the barbeque sauce, hoisin, honey and ground cinnamon.

Assemble:

Grill the burgers on a very hot grill and brush with the glaze every time you turn the burgers. Once cooked through, remove from the grill and give the burger one last brush of the glaze. Spread the grape mustard on the bottom layer of the buns, topped with the watercress. Follow with the glazed burger, sliced tomato, onion and the bun top. Serve immediately.
