Ingredients

  • 1/4 c. olive oil
  • 4 carrots, chopped
  • 1 onion, cut into quarters
  • 1 c. chopped celery
  • 2 cloves garlic, finely chopped
  • 1 tsp. finely chopped fennel
  • salt and black pepper to taste
  • 12 small new potatoes
  • 1 lb. mushrooms, cut into halves
  • 2 cans (12 oz. each) diced tomatoes, undrained
  • 1 can (8 oz.) tomato sauce
  • 1 tbsp. dried oregano leaves
  • 1 lb. *Drier's* smoked Polish or summer sausage sliced

Preparation

Step 1

Heat oil in heavy skillet over medium-high heat; add carrots, onion, celery, garlic, fennel salt and pepper. Sauté until vegetables are soft. Add potatoes, mushrooms, tomatoes with liquid, tomato sauce and oregano; cook 20 minutes over low heat. Add polish kielbasa; simmer 15 minutes or until heated through.
