Ingredients
- 1/4 c. olive oil
- 4 carrots, chopped
- 1 onion, cut into quarters
- 1 c. chopped celery
- 2 cloves garlic, finely chopped
- 1 tsp. finely chopped fennel
- salt and black pepper to taste
- 12 small new potatoes
- 1 lb. mushrooms, cut into halves
- 2 cans (12 oz. each) diced tomatoes, undrained
- 1 can (8 oz.) tomato sauce
- 1 tbsp. dried oregano leaves
- 1 lb. *Drier's* smoked Polish or summer sausage sliced

Preparation
Step 1
Heat oil in heavy skillet over medium-high heat; add carrots, onion, celery, garlic, fennel salt and pepper. Sauté until vegetables are soft. Add potatoes, mushrooms, tomatoes with liquid, tomato sauce and oregano; cook 20 minutes over low heat. Add polish kielbasa; simmer 15 minutes or until heated through.
