Ingredients
- 2 tbsp. butter
- 3 med. slices of *Drier's* ham chopped
- 1/4 c. chopped green bell pepper
- 1/4 c. chopped onion
- 1/2 c. sliced fresh mushrooms
- 8 to 12 eggs beaten
- 1/2 to 1 c. of shredded N.Y.cheddar cheese

Preparation
Step 1
Melt butter in medium skillet over medium heat; sauté ham. Bell pepper and onion 3 to 4 minutes. Add mushrooms; stir and heat through. Prepare 2 or 3 egg omelets fill each with 2 tablespoon cheese and 1/4 cup ham mixture. Use remaining ham mixture as omelet toppings.
