Ingredients

  • Meat Sauce
  • 1 lb. lean ground beef
  • 1/2 c. chopped onion
  • 1 (1.25-oz.) pkg. Old El Paso taco seasoning mix
  • 1 (15.5-oz.) can pinto beans, drained
  • 1 (15-oz.) can tomato sauce
  • 1/8 tsp. pepper, if desired
  • Salad
  • 6 c. shredded lettuce
  • 2 c. corn chips
  • 2 medium tomatoes, chopped
  • 1 medium avocado, pitted, peeled and chopped
  • 6 oz. (1 1/2 c.) Longhorn cheddar cheese
  • 3/4 c. Old El Paso thick 'n chunky salsa sour cream, if desired

Step 1

In large skillet, cook ground beef and onion over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain. Spray 3 1/2 to 4-quart slow cooker with nonstick cooking spray. Combine beef mixture and all remaining meat sauce ingredients in sprayed slow cooker; mix well. Cover; cook on low setting for 6 to 8 hours. To serve, place lettuce and corn chips on individual plates. Top each with meat sauce, tomatoes, avocado, cheese, salsa and sour cream.
