One Pot Chicken Spaghetti 1 Picture

Ingredients

  • 4 small chicken breasts, cut into one inch chunks
  • 2 Tbsp chopped garlic
  • 2 Tbsp dried minced onion (or 1/2 cup diced fresh)
  • Olive Oil
  • 1 cup chicken broth
  • 1/2 cup water
  • 1/2 box dry pasta (about 2 1/2 cups)
  • 1 tsp Italian Seasoning
  • 1 bay leaf
  • 1 jar spaghetti sauce (26-28 oz)
  • Salt and Pepper
  • 1 cup fresh shredded Parmesan Cheese

Preparation

Step 1



1. Heat a small amount of olive oil in the pot over medium-high heat and add garlic and onion. Cook for a few minutes, careful not to burn.

2. Add chicken and season with generous amounts of salt and pepper. Cook chicken until almost done.

3. Add spaghetti sauce, chicken broth, water and seasonings and bring to a boil.

4. Add pasta and a few pinches of salt; stir. Reduce heat to low.

5. Simmer for about 17-20 minutes, stirring at least once. Add more water or chicken broth if it seems dry.

6. Remove from heat and stir in shredded Parmesan. Sprinkle servings with a little extra Parmesan and parsley flakes, if desired.
