Ingredients

  • 4 chicken legs with thighs
  • Salt
  • 2 Tablespoons oil
  • 1 onion, finely chopped
  • 2 cloves garlic, pressed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 2 Tablespoons brown sugar
  • 3 small yams or sweet potatoes (1 lb total) peeled, cubed
  • 1 tart green apple, peeled, cored and cubed
  • 1 can (8 ounces) tomato sauce
  • 1/2 cup chicken broth
  • 2 Tablespoons apple cider vinegar

Step 1

Salt the chicken lightly. Heat oil in skillet and brown chicken. Remove chicken and set aside.

To the drippings in the pan, add onion and cook until golden. Add garlic, cinnamon, cloves and brown sugar. Add the chicken again the yams, apple, tomato sauce, and chicken broth. Cover and simmer for 45 minutes.

Remove chicke, yams and fruit to a serving dish. Stir vinegar into skillet and stir over heat until sauce is thickened. Pour over chicken. Serve with, or on, hot cooked rice.
