Ingredients
- 1 cup lentils, dry
- 3 cups water
- 1 bay leaf
- 1 large onion, chopped
- 1 carrot, chopped or grated
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1 cup tomatoes
- 1 teaspoon basil
- 2 tablespoons fresh parsley
- 2 teaspoons salt

Preparation
Step 1
Bring the lentils to a boil in the 3 cups water, adding the bay leaf. Cover and simmer 15 minutes.
Cook onion, carrot and garlic in olive oil until soft, 3 to 5 minutes. Add tomatoes and seasonings. Mix all with lentils and simmer covered for about 20 minutes or until lentils are tender. Remove bay leaf.
