Ingredients

  • 2 crust pastry
  • 5 cups frozen pitted cherries
  • 1 1/4 cup sugar
  • 4 Tbsp cornstarch
  • 3/4 cup-1 1/4cup sugar
  • juice from cherries with 1/2 cup reserved
  • 1/2 tsp almond flavoring

Step 1

Thaw cherries and drain (saving juice). Mix cornstarch, 3/4 cup sugar and 1/2 cup drained juice. (if cherries were frozen withour sugar use 1 1/4 cups sugar instead of 3/4 cup).

Heat rest of juice in saucepan to boiling, add cornstarch mixture gradually and cook until thickened slightly and clear. Remove from stove, add almond flavoring and cherries. Pour into bottom crust, cover with top crust or lattice strips. Bake 30 min at 350, then 10-15 min at 375.
